Woot woot....good luck with the veg thing. I remember the first week I started, our food was so bland and dry and boring and, well you get the picture. Its improved a little since then, although we never got around to liking much of the faux meat stuff. Tofu is pretty versatile, and once in awhile we use some tempeh, but other than that its pretty much veggies and grains.
The eggplant story made me laugh........I keep telling Boo that some refrig company needs to come out with a refrig that has the crisper trays on the outside of the door so I can enjoy all the colors of the food that I buy (oh, and so the kids can just walk by and grab something).
